Easy Skillet Pork Chops

Pork is a lean meat and often can be found on sale in the grocery store, but we just don't eat much of it in our house.  I don't have a lot of good pork recipes.  However, the most recent one that I tried will certainly go into the regular rotation.  (Please don't let my food photography skills cloud your judgement about making this dish)

Easy Skillet Pork Chops

Ingredients
3-4 loin pork chops
1 1/2 Tbsp butter
3/4 c chopped onion
1/2 tsp salt
1/8 tsp pepper
1 tsp cornstarch
2 tsp spicy mustard
1 c water
1 beef bouillon cube (I used 1 pack of Swanson beef flavor)
1 tsp Worcestershire sauce

Saute pork chops in butter until brown; set aside.

Reserve drippings.  Saute onions in drippings until tender.

Add salt, pepper, cornstarch and mustard; stir well.  Add water, bouillon and Worcestershire sauce.  Stir until bouillon is dissolved.  Place pork chops in skillet and simmer 20-30 minutes.

Goes great with rice or mashed potatoes and of course, cooked apples.

Enjoy!
